Paleo Zuppa Toscana
Hello! I hope you are all having a great day today. Here in Colorado we went from 75 to 38 and rain/snow mixture. Spring time in the Rockies is so much fun :) So today I whipped up some Paleo Zuppa Toscana and realized I didn't have this recipe on my website. You may not be aware of this but I made this website for our two older children (22-20) so that when they moved out they had an easy reference to go to when they wanted some comfort food or just some advice. That being said I thought I would do a little tutorial for the kiddos.

Clean your Kale and slice into bite size pieces. Set aside.
Peel and rinse your potatoes. Dice potatoes like you would for mashed potatoes.
Place your potatoes into your soup pot and cover with the chicken broth. Place your pot onto the stove and start to boil your potatoes.
In a separate pan brown your ground pork.
Using a potato masher push down into the meat and separate so it can cook quickly.
Add your Salt, Pepper and Red Pepper Flakes to the pork. (Season to taste. We like our Sausage spicy!)
Drain your sausage into a paper towel.
Add the Sausage to the boiling potatoes. Yes you want the broth to be flavorful.
When potatoes are almost done add your coconut milk and Kale. Push down the Kale so it all fits into your pot. Wilt your Kale for 10 minutes. Stir the soup so it is well combined.
Serve immediatley and remember you won't have any leftovers. :)

Ingredients
1-pound ground pork
4-6 large russet potatoes
1 bunch of Kale
4 Cups Bone Chicken Broth
2 Cups So Delicious Unsweeted Coconut Milk (Green Label)
Salt
Pepper
Red Pepper Flakes
Directions
