Huevos Con Chile Relleno Bake
1 (22.5-oz.) box José Olé® Steak & Cheese Taquitos cut into thirds, partially thawed
8 large eggs, beaten
1 (7-oz.) can diced green chilies
1 cup shredded cheddar and Jack cheese blend, divided
3/4 cup chunky salsa
Preheat oven to 400°F. In large bowl, mix together José Olé® Taquitos with eggs, green chilies, 3/4 cup cheese and salsa. Pour into a lightly greased 11x7x2-inch baking dish. Bake, covered, for 30 to 35 minutes or until center is firm. The last 3 minutes of baking, top with remaining cheese. Serve with additional salsa if desired. Makes 4 to 6 servings.
