Lemon CrissCross Cookies

1 cup oleo (butter or margarine)

1.5 cups sugar

2 eggs

1 tsp. Lemon Extract

2 cups Raisins (OPTIONAL)

3.5 cups Flour

1.5 tsp. cream of tarter

1.5 tsp. baking soda

½ tsp. salt

Heat oven to 350 degrees.

Mix oleo, sugar, eggs, and lemon extract. In a separate bowl sift flour, cream of tarter, baking soda, and salt. Add dry mixture into the creamed mixture. (IF YOU WANT ADD RAISINS). Roll into balls the size of walnuts. Place on sheet 3 inches apart. Flatten with fork dipped into flour making crisscross . Bake 8-10 minutes. My kids hate raisins so we omit them.
