Traditional Italian Pear Tart (Crostata di Pere)

Ingredients

- 1 package prepared puff pastry dough

- 2/3 cup fresh fruit such as plums, apricots, pears, apples, berries, etc.

- Sugar

- Flour for dusting

- Powdered sugar for serving

Directions

1.  Preheat oven to 425 degrees.

2.  Clean the fruit as needed. If using stone fruit, cut them in half and remove all pits. If using pears or apples, remove the skins and slice them into 1/8 inch thick slices.

3.  Roll the puff pastry to 1/8 inch thickness and cut it into rectangular sheets approximately 6 inches long x 4 inches wide.

4.  Place the sheets of dough onto a rimmed baking sheet lined with parchment paper. Top the dough with your prepared fruit, leaving a 1/2 inch border around the tart.

5.  Sprinkle the border with sugar.

6.  Place the pan with the tarts in the oven on the bottom rack and bake for 25 - 30 minutes until the dough is a deep, golden brown and the fruit is thoroughly cooked.

7.  When the have finished cooking, remove the tarts from the oven and let them cool for 15 - 20 minutes.

8.  Just before serving, sprinkle the tarts with a light dusting of powdered sugar.

Notes

You can substitute pizza dough for the puff pastry dough in this recipe.
