* 1/2 cup beef or chicken broth
* 1/3 cup smooth peanut butter
* 2 teaspoons cornstarch
* 1 tablespoon vegetable oil
* 1 tablespoon grated fresh ginger
* 3 garlic cloves, minced
* 1 pound lean ground beef ~ or diced chicken
* 1 cup shredded carrots
* 1/4 cup thinly sliced green onion
* 2 tablespoons soy sauce
* Boston lettuce leaves
* Chopped peanuts (optional)
* Cilantro (optional)

Tuna & White Bean Wraps

Ingredients

* 2 tablespoons lemon juice
* 3 tablespoons minced red onion
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons olive oil
* 2 cans (19 ounces each) cannellini beans, rinsed, drained and coarsely mashed
* 2 cans (6 ounces each) tuna packed in olive oil, drained
* 1 cup cherry tomatoes, sliced
* 1/4 cup minced fresh parsley
* 6 sun-dried tomato&basil, plain or spinach tortilla wraps
* Carrot and cucumber sticks, for serving

No-Cook Asian Chicken Wraps

Ingredients

* 1/2 cup creamy peanut butter
* 1/2 cup warm water
* 2 tablespoons reduced-sodium soy sauce
* 2 tablespoons rice wine vinegar
* 1 clove garlic, finely chopped
* 1 scallion, chopped
* 1/2 rotisserie chicken, shredded (about 2-1/2 cups), from a 3-pound chicken
* 4 large rectangular wraps or large tortillas
* 1/2 sweet red pepper, cored, seeds removed and thinly sliced
* 1/2 large cucumber, peeled, halved lengthwise and thinly sliced
* 1 cup mung bean sprouts

Tex-Mex Stew

Ingredients

* 1 1/2 pounds lean ground beef
* 1 cup frozen chopped sweet green and red peppers
* 1 (15 1/2-ounce) can black beans, drained and rinsed
* 1 (11-ounce) can corn nibblets, drained
* 1 (4 1/4-ounce) jar diced green chiles
* 1 packet onion soup mix
* 2 1/4 cups water
* 1 tablespoon ground cumin
* 1/2 teaspoon salt
* 1/2 teaspoon dried oregano
* 1/4 teaspoon cayenne pepper
* 1/4 cup water
* 2 tablespoons all-purpose flour

Directions

Turkey Bacon Rolls

 Ingredients

* 1 piece flat shepherd's bread, not whole wheat (from 14-ounce package)
* 1/3 cup Thousand Island dressing
* 1/4 cup crumbled cooked bacon (4 slices, cooked and crumbled)
* 8 ounces sliced deli turkey
* 4 ounces sliced Muenster
* 1 cup shredded lettuce

Directions

Unfold bread. Top with dressing, bacon, turkey, cheese and lettuce.

Beginning with short end, roll up bread. Trim ends. Slice into 1 1/2 to 2-inch thick pinwheels.

Wonton Soup

 
Ingredients
 
    * 6 cups reduced-sodium chicken broth
    * 1 cup shredded cabbage
    * 1/2 cup shredded or diced cooked pork
    * 1 tablespoon soy sauce
    * 1 tablespoon sesame oil
    * 16 wonton wrappers
    * 1/4 cup chopped scallions
 
Directions
 
Place broth and cabbage in a large saucepan and set pan over medium-high heat. Bring to a simmer.
 

Sausage & Escarole Soup

 
Ingredients:
 
1 cup uncooked dried navy beans
1 pound sweet Italian pork sausage, casing removed, or Hot depends on your family
1 large onion, thinly sliced (about 1 cup)
2 cloves garlic, thinly sliced
6 cups Chicken Broth 
1 head escarole (about 1 pound), chopped (about 8 cups)
Grated Parmesan cheese
Freshly ground black pepper
 
Directions:
 
Soak the beans according to the package directions. Drain.
