Fish in a pond

 Kids snacks can be healthy and fun to prepare, too. In fact, these Goldfish in the Pond snacks are one of my favorite healthy snacks for kids, because the kids can do everything themselves.

Rice cakes, cream cheese, Goldfish crackers and blue food coloring are all you need for these fun kids snacks.

* 4 plain rice cakes
* 1/4 cup whipped cream cheese
* 2 drops blue food coloring
* Goldfish crackers for decorating

Frozen Grapes

 Frozen grapes make a refreshing and healthy snack you will find absolutely surprising and delightful. You'll still get that familiar grape flavor. But when frozen, grapes take on a texture that is almost like a sorbet. Indeed, this frozen grapes recipe is almost like little sorbet nibbles!

Ingredients:

* 1 large bunch of seedless grapes (preferably red, though green grapes work well, too)

Ingredients

* Smooth Peanut Butter
* 1 whole Red Apple, Cored And Cut Into 8 Pieces
* Mini Marshamallows

Preparation Instructions

Spread peanut butter on one side of each apple slice (squeeze a little lemon juice over the apple if not serving immediately). Place marshmallows on one apple slice, using the peanut butter as glue. Lay another apple slice, peanut butter side down, on top.

 

Beef Stroganoff

Prep: 15 minutes Total: 45 minutes

Stir in the sour cream just before serving this hearty Russian dish. We chose tenderloin, but you can substitute trimmed rib-eye, which is less expensive.

Ingredients

* 1 pound beef tenderloin
* Coarse salt and ground pepper
* 3 tablespoons canola oil
* 1 medium onion, thinly sliced
* 1 pound white mushrooms, sliced 1/2 inch thick
* 1 cup reduced-sodium canned beef broth
* 1 tablespoon Dijon mustard
* 1/2 cup sour cream
* Chopped fresh dill, for garnish

Easy Roasted Chicken

Prep: 10 minutes Total: 1 hour

Roast a chicken, and use it in wraps and salads; you can even cook two at once. If making the Asian-Style Chicken Wraps, leave the chicken whole; if a recipe calls for shredded chicken, shred before storing.

* 1 whole chicken (about 3 1/2 pounds), rinsed and patted dry
* 2 tablespoons butter, room temperature
* Coarse salt and ground pepper

Chicken Satay with Peanut-Chutney Sauce

Prep: 45 minutes Total: 45 minutes

You will need twelve metal or wooden skewers for this dish; soak wooden skewers thoroughly in water before using to prevent them from scorching on the grill.

The peanut-chutney sauce can be refrigerated in a covered container for up to a week. If you like, double the recipe, and serve the extra with grilled pork or as a dipping sauce for shrimp.

Garlic-Rosemary Flatbread

Premade pizza dough, either refrigerated or frozen, can be purchased at your local pizza parlor or grocery store.

* 1 tablespoon extra-virgin olive oil, plus more for drizzling
* 1 garlic clove, minced
* 1 teaspoon coarse salt, plus more for seasoning
* Cornmeal, for sprinkling
* 1 pound premade pizza dough, room temperature
* 1 1/2 teaspoons finely chopped fresh rosemary, plus a handful of small sprigs for topping

Directions

Garlic Knots

Prep: 25 minutes Total: 1 hour

To make ahead: Prepare through step 1, freeze in a single layer, and transfer to a resealable plastic bag; freeze up to 3 months. To bake from frozen: Place knots on a rimmed baking sheet; brush with 1 tablespoon oil. Bake at 400 degrees for 20 to 25 minutes. Proceed with step 3.
