Cucumber Yogurt Boats

* Small cucumbers, such as Kirbys

* Small container of plain yogurt
* Sugar
* Salt
* Cumin

Halve cucumbers lengthwise and scoop out seeds. (A melon baller works great for this.) Mix some plain yogurt, a couple of pinches of sugar, a pinch of salt and a dash of cumin in a bowl. Spread into hollowed cucumbers.  

Chocolate-Banana Tortillas

If your kid is obsessed with chocolate-covered frozen bananas, he'll love our healthful approach to this glorious duo. Easier to make than banana bread, these are addictive either hot or cold, for breakfast or dessert. Just don't forget to save one for the kids.

* Pat of butter
* One banana, thinly sliced
* Handful chocolate chips
* Two flour tortillas
* Powdered sugar for dusting (optional)

Strawberry Cheescakes

* 3 ounces of cream cheese, softened for 10 seconds in the microwave
* 3 tablespoons strawberry jam
* A few sheets of graham crackers, broken into squares or rectangles

Mix the softened cream cheese with the jam. Spread a little of the mixture on top of each graham cracker. Either eat right away, or chill for 30 minutes. The grahams will soften and become more like a cheesecake crust, and the topping will firm up.

Kids can help: Break up grahams, stir cream cheese and jam

Extras: Use different flavors of jam, top with a slice of fresh strawberry 

Yogurt Dipped Strawberries

Yogurt dipped strawberries are one of my favorite healthy snacks. They taste amazing -- especially when strawberries are in season -- and they're loaded with fiber, calcium, vitamin C and more.

I like to use a maple almond granola (Trader Joe's makes a nice one) for the topping, because it adds a nice crunch to these yogurt dipped strawberries. But feel free to use your favorite kind.
Prep Time: 10 minutes
Ingredients:

* 1 quart fresh strawberries
* 1/2 cup low-fat vanilla yogurt
* 1/4 cup granola

Preparation:

Fruit Dip

This fruit dip recipe makes a sweet appetizer for kids or a refreshing dessert. Serve this recipe for fruit dip with fruit kabobs or chunks of pineapple, strawberries, bananas and cantaloupe.
Prep Time: 10 minutes
Ingredients:

* 2 cups part-skim ricotta cheese
* 1/2 cup plain yogurt
* 1 3.4 oz. package instant vanilla pudding mix

Preparation:
With an electric mixer, beat all ingredients together until smooth. Refrigerate until ready to serve.

Serve with chunks of fruit or fruit skewers. 

Yogurt Fruit Sundae

This yogurt fruit sundae makes a tasty and healthy snack or dessert. Feel free to change the fruit, depending on your tastes and what's in season. Strawberries, blueberries and peaches would all work well in this yogurt sundae recipe.
Prep Time: 5 minutes
Ingredients:

* 2 4 oz. waffle cone bowls
* 2 cups low-fat or non-fat vanilla yogurt
* 1/2 cup fresh raspberries
* 2 Tbsp. chocolate chips
* 2 Tbsp. chopped walnuts
* 2 tsp. maple syrup

Preparation:

1. Place each waffle cone bowl on a plate.

Apple Slices with Peanut Butter

 Apple slices with peanut butter are one of my kids' favorite snacks. In this version, I use regular peanut butter, soy nut butter, or homemade chocolate peanut butter to top apple slices, then sprinkle granola over them for a sweet and savory snack that's healthy, too.

Look for chocolate peanut butter or soy nut butter at your local health food store, such as Wild Oats or Whole Foods. Some larger supermarkets carry these gourmet nut butters, too. Or make your own chocolate cherry peanut butter.

Fish in a pond

 Kids snacks can be healthy and fun to prepare, too. In fact, these Goldfish in the Pond snacks are one of my favorite healthy snacks for kids, because the kids can do everything themselves.

Rice cakes, cream cheese, Goldfish crackers and blue food coloring are all you need for these fun kids snacks.

Ingredients:

* 4 plain rice cakes
* 1/4 cup whipped cream cheese
* 2 drops blue food coloring
* Goldfish crackers for decorating

Preparation:

Frozen Grapes

 Frozen grapes make a refreshing and healthy snack you will find absolutely surprising and delightful. You'll still get that familiar grape flavor. But when frozen, grapes take on a texture that is almost like a sorbet. Indeed, this frozen grapes recipe is almost like little sorbet nibbles!
Prep Time: 5 minutes
Ingredients:

* 1 large bunch of seedless grapes (preferably red, though green grapes work well, too)

Preparation:

1. Wash grapes and pat dry with a paper towel.

Ingredients

* Smooth Peanut Butter
* 1 whole Red Apple, Cored And Cut Into 8 Pieces
* Mini Marshamallows

Preparation Instructions

Spread peanut butter on one side of each apple slice (squeeze a little lemon juice over the apple if not serving immediately). Place marshmallows on one apple slice, using the peanut butter as glue. Lay another apple slice, peanut butter side down, on top.
