4 eggs
2 C sugar
1 1/2 C vegetable oil
1 large can pumpkin
1 t baking soda
1 tsp salt
2 t cinnamon
2 1/2 C flour
1/2 C nuts, optional (I love nuts, but think in this case it may take away from the melt-in-your-mouth effect of these very moist spongy bars)
mix in order given, making sure that each ingredient is added slowly and fully incorporated before the next one is added. pour into jelly roll pan and bake for 25 to 30 min @ 350 toothpick should not be completely clean...should still have little moist crumbles - - may want to start checking at 22 min or so. frosting: 5 C powdered sugar 3 pk 8 oz cream cheese 2 sticks of butter 3 t vanilla cream butter and cream cheese together (5 min) add vanilla. add sugar a cup at time, to your liking. Spread on completely cooled bars and refrigerate. very good if you let them sit for a day!
