2 eggs
1 cup sugar
1/2 cup canola oil
1 tsp. vanilla
8 oz sour cream
2 cups flour
1/2 tsp. salt
1/2 tsp. Baking Soda
1 tsp. Baking Powder
In a large bowl, beat eggs. Add sugar, oil, vanilla, salt and sour cream, mixing well. All at one time, add flour, baking soda, baking powder. Stir until all is moistened and slightly lumpy. (add your optional ingredients I.E. 1 cup blueberries) Pour into oiled muffin tins about 2/3 full and bake at 350 for 20 minutes. Notes 1 cup of blueberries, nuts, raisins, or chocolate chips may be added.
For spice muffins, with the flour, add 1/2 tsp. cinnamon, 1/4 tsp. ground nutmeg, 1/8 tsp. ground cloves.
