Texas Caviar
1 can Black Eye Peas, drained
1 can Corn, drained
1 can Black Beans, drained
1 can Petite Diced Tomatoes, drained
2 Fresh Medium Jalapeños, stemmed, seeded and minced
1/2 Orange Bell Pepper, diced
1/2 Yellow Bell Pepper, diced
1/4 Red Bell Pepper, diced
1/4 C Fresh Cilantro, chopped
1/2 tsp Kosher Salt
1/2 tsp Fresh Ground Black Pepper
1/2 tsp Garlic Powder
1/2 tsp Chipotle Chili Powder
1 tsp Dried Oregano
1 1/2 tsp Ground Cumin
6 TBSP Zesty Italian Dressing
Mix all ingredients in a bowl, cover the bowl with plastic wrap and marinate in the refrigerator at least 2 hours. Best if marinated for 24 hours before your BBQ. Serve with Tortilla Chips.
