Paleo- Chicken Stir Fry
1 lb of boneless skinless Chicken Breasts diced
1 head of cauliflower
1 head of broccoli
1 onion diced
2 red peppers sliced
1 cup carrots
1 cup celery
1 cup shredded cabbage
Season meat with salt, pepper, garlic and ginger to taste. Saute chicken in coconut oil until golden brown and cooked through out. Take out chicken. Add more oil, saute veggies until tender but crisp. Add chicken to veggies pour some chicken broth over the mixture and let simmer for a couple of minutes. Taste your stir fry and add more seasonings to taste.
