Pretzel Rolls

Ingredients
1-1⁄2 cup Warm Water (110°F) 1 package (1/4 Oz. Packet) Active Dry Yeast (not Quick Rise Yeast) 2 teaspoons Sugar 4-1⁄2 cups Unbleached All-purpose Flour 2 teaspoons Kosher Salt 4 Tablespoons Unsalted Butter, melted 1⁄4 cups Baking Soda 1 whole Egg, Lightly Beaten Pretzel Salt, To Sprinkle On Top

Bread Machine Buttermilk Rolls

3/4 C Buttermilk or Sour Milk*

1 egg

1/4 C butter, cut up

3 C bread flour

2 TBSP sugar

3/4 tsp. salt

1 tsp. active dry yeast or bread machine yeast

 

Add the ingredients to the bread machine according to the manufacturer's directions.  Select the dough cycle.  When the cycle is complete, remove dough and punch down.  Cover and let rest for 10 minutes.  Shape dough into basic rolls or cloverleaf rolls.

Pecan Pie Muffins

Pecan Pie Muffins

1 cup chopped pecans
1 cup brown sugar
1/2 cup flour
2 eggs
1/2 cup (stick) butter or margarine, melted****

Combine first 3 ingredients. In separate bowl beat eggs until foamy and add butter. Pour egg mix into dry ingredients and blend until moistened. Don’t over blend. Pour into muffin tins with papers. Bake at 350° for 20-25 minutes.

****TO MAKE DAIRY FREE USE FLESHMAN'S UNSALTED MARGARINE. IT IS THE ONLY PRODUCT THAT DOES NOT HAVE DAIRY.  IT IS THE GREEN BOX****

Grandma Giro's Potica Bread

DOUGH

2 C milk scalded and cooled to lukewarm

2 TBSP butter

1/2 C sugar

2 tsp salt

1 cake yeast dissolved in 1/4 c warm water

5 1/2 C flour

2 well beaten eggs

Let rise, punch once, roll on floured board.

 

FILLING

2 LBS walnuts ground

1/2 C sugar

1 tsp vanilla

Half and Half cream to make paste

 

Grease 3 loaf pans.  Butter top of bread and pierce with tooth pick.

Bake 375 for 15 minutes

Bake 300 for 30 minutes

EZ White Bread

Loaf of White Bread

1 1/8 cups warm water
1 3/4 – 2 tsp active dry yeast
2 Tblsp sugar (you can use a little more sugar if you like your dough a little sweeter)
3 cups flour ( I use 50% AP & 50% White Whole Wheat)
1 Tblsp vital wheat gluten (remember you don’t need as much gluten if you’re not using whole wheat flour)
1 tsp salt
2 Tblsp nonfat dry milk
1 1/2 Tblsp butter/margarine or oil
1/4 cup potato flakes
(you don’t really need vinegar for white bread, remember the dough enhancers are primarily needed for whole wheat bread)
