Cinnamon Chia Seed Granola

Ingredients:

Makes four 1/4 c. servings

1 c. old fashioned oats

2 tbsp. chia seeds

1/2 tsp. cinnamon

1/4 tsp. nutmeg

2 tbsp. honey

1 tbsp. canola oil



Directions:

Preheat oven to 300 degrees and spray a cookie sheet with cooking spray. Combine oats through nutmeg in a small bowl and stir. Slowing stir honey and canola oil into oat mixture until oats are adequately coated. Spread granola onto prepared cookie sheet and bake for approximately 15 minutes, stirring halfway through. Let cool until oats become crunchy and enjoy.

Nerf Wars: Date Night From The Dating Divas

We pulled out our Nerf guns to be part of the centerpiece on our table and planned a great night consisting of three different games.  The first game would require some sort of tag to keep track of how many times you were hit. The game I decided to use was much like the basketball game, “Horse”, where you keep track of letters when you miss. Only in Nerf Wars each time you are hit you would flip the letter and you would be out when you returned to the first letter again. Pretty easy and lots of fun.

Fruit and Spinach Salad with Strawberry Vinaigrette

This strawberry, apple and pear spinach salad is easy, light and delicious. I've created a tasty mild strawberry poppyseed vinaigrette to go with it. This salad is loved by every palate; young and old. If you like a stronger vinaigrette, feel free to add more red wine vinegar. I've also tested this with cider vinegar and it worked well; although I liked the red wine vinegar a teensy bit more.
