Lemon Blueberry Bread

Ingredients:

3 eggs

1 C sugar

1 C brown sugar

1 C vanilla soy milk

4 oz apple sauce

1 tsp lemon extract

3 C sifted flour ***(I use a 50/50 mix of AP and White Whole Wheat)***

1 tsp salt

4 tsp baking powder

2 C blueberries (fresh or frozen without syrup)

 

Preheat oven to 325

Cream together the eggs and sugar.  Add milk, apple sauce and lemon extract.  In a separate bowl, sift together flour, salt, and baking powder.  Add liquid ingredients, mix to combine.  Toss blueberries in a little flour to keep them from sinking to the bottom of the bread.  Add blueberries to the batter and pour into 2 regular well-greased loaf pans.  Bake 30-40 minutes or until tooth pick comes clean.
