Ingredients:
4 eggs
1 1/2 C sugar
1 1/2 C brown sugar
1 cup canola oil
2/3 C vanilla soy milk
1 (15oz) can pumpkin
3 1/2 C flour *** ( I use a 50/50 mix of AP and white whole wheat)
1 1/3 tsp salt
1/2 tsp baking powder
2 tsp baking soda
1 tsp pumpkin pie spice
Directions:
In a mixer bowl combine eggs, sugar, oil, vanilla soy milk and pumpkin. In a separate bowl combine the dry ingredients. Add the dry ingredients to the wet and combine. Pour into 3 5x9 pans and bake for 1 hour in a 325 degree oven.
