Mint White Hot Chocolate
2 cups milk
2 cups half & half cream
8 oz. white chocolate, chopped
1 tsp. peppermint extract
a few drops of green food coloring
marshmallows (optional)In a heavy- bottomed pot, heat the milk and cream over medium heat for 5 minutes. Stir in the white chocolate, remove from heat and set aside for a few minutes. Add the peppermint extract and food coloring and whisk until smooth.
Serve immediately. Serves 4.
Makes approximately 1 quart
2 cups dry white wine*
1/2 cup peach schnapps
1 cup water
2/3 cup sugar
2 sprigs of mint
1 large peach, peeled and sliced
makes 1 large pitcher
1 cup strawberries hulled
1 cup blueberries
1 cup raspberries
1 teaspoon sized knob of fresh ginger, peeled and lightly crushed
1 1/2 cups berry flavored vodka (I used Absolut raspberry)
1 1/2 cups berry flavored juice (I used Ocean spray blueberry juice)
1/2 cup sugar or to taste
one 750 ml bottle of red wine (I used Barefoot Merlot)
1-2 cups gingerale
ice cubes
mint sprigs for garnish
1 bottle red wine (I used a Pinot Noir)
1 cup light rum (such as Bacardi Puerto Rican Rum)
1 cup simple syrup (see recipe below)
2 plums, pitted and sliced
1 pint cherries, pitted
1 pint strawberries, sliced
sprig of mint, optional
12 oz lime soda
ice (optional)
Ingredients:
1 ½ cups diced watermelon
1 ½ cups diced cantaloupe
1 ½ cups diced honeydew melon
2 cups ice
10 mint leaves Juice from
¼ lime
2 bottles spumonte or other sparkling wine
Directions:
Pour all of the diced melons in a large glass pitcher. Top with ice.
Gently muddle mint leaves with the lemon juice. Add to pitcher.
Pour wine last into the glass and stir with a wooden spoon.
DRINK!

3/4 cup fresh strawberries, hulled
3-4 tbsp. grenadine
2 liter bottle lemon lime soda (I used sprite zero)
Lime zest, optional
