Oreo Truffles

1 Bag of OREO cookies, Crushed

8 oz Cream Cheese, Softened

1 LB Vanilla flavored candy coating, melted.

In a mixing bowl, (I use a food processor) combine crushed cookies and cream cheese to form a stiff dough. Roll into balls, about 1-inch in diameter. Place on waxed paper covered cookie sheet and place into the freezer for 15 minutes. Remove from freezer and dip with a fork in melted candy coating. Let rest on wax paper until set.

Root Beer

Easy Root Beer

1 1/2 cups water

3/4 cups sugar

1 1/2 tsp root beer extract

1 bottle ( 1 liter) Club Soda

Bring water to boil and stir in sugar and extract. Cool in fridge completely. When ready to serve, slowly pour soda into root beer mixture until well blended. We make italian sodas all the time in my house so here is our root beer recipe.

Pumpkin Pie Cake

PUMPKIN PIE CAKE

1 - 18oz can pumpkin (or fresh equivalent)

1 box yellow cake mix (2 layer size)

1 cup sugar

1/2 c. melted margarine or butter

1 - 13oz can evaporated milk (not sweetened condensed)

3/4 c. chopped pecans or walnuts

3 eggs

3 tsp cinnamon

Butter-Crunch Pumpkin Bars

15 oz can pumpkin

12 oz can evaporated milk

3 large eggs

1 1/2 cups sugar

1 tsp cinnamon

1/2 tsp salt

TOPPING: 1 pkg yellow cake mix (Duncan Hines Butter Golden)

1 cup chopped pecans

1 cup melted butter

Mix pumpkin, evaporated milk, eggs, sugar, cinnamon and salt until creamy. Pour into greased 13x9 pan. Sprinkle on dry cake mix and pecans then drizzle on melted butter. Bake at 350 degrees for 50 minutes. Serve with a dollop of whipped cream....yumm

Cheesy Chicken

6 boneless, skinless chicken breasts

10 oz. can condensed cream of chicken soup

10 oz. can condensed Fiesta cheese soup

Preparation: Place chicken breasts in 3-1/2 to 4 quart crockpot. Pour the undiluted soups over the chicken and stir to combine. Cover crockpot and cook on low 6 to 8 hours, until chicken is tender and thoroughly cooked. Serve over rice or noodles. 6 servings
