Paleo Pasta

Ingredients:
- 2/3 cup arrowroot powder (plus extra for kneading)
- 1 cup almond flour (I use Honeyville brand)
- 1 cup tapioca flour (make sure to find a brand that is gluten-free, some brands sneak in wheat products!)
- 2 tsp. sea salt
- 2 large eggs
- 4 egg yolks (from large eggs)

Spring Orzo Pasta Salad with Asparagus and Artichokes

1 bunch asparagus, about 3 cups diced
1 tablespoon olive oil
2 shallots, minced
2 cloves garlic, minced
12 ounces orzo pasta, cooked to al dente and cooled
15-ounce can artichoke hearts
1-1/2 cups sun-dried tomatoes in olive oil, julienned
1 lemon, zested and juiced
1/4 cup white wine vinegar
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/3 cup olive oil
