Strawberry Mango Salsa

Ingredients:

 

1 cup strawberries, hulled and diced
1 medium mango, peeled, pitted, and diced
1/2 avocado, peeled, pitted, and diced
2 tablespoons diced red onion
1 tablespoon diced jalapeno
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
Salt, to taste
Tortilla chips or pita chips-for serving

 

Directions:

 

1. In a medium bowl, stir together strawberries, mango, avocado, onion, jalapeno, cilantro, and lime juice. Season with salt, to taste.

Steak Salad Lettuce Wraps

Ingredients
  • 1 steak
  • 12 small pieces of lettuce, kale or endive
  • ½ carrot, grated
  • 1 green onion, sliced into long strips
  • ½ tomato, cut into ½" cubes
  • 2 tablespoons parsley or cilantro
  • Juice from ½ lemon
  • 1 garlic clove, finely grated (preferably with a microplane)

Campfire Eclairs!

Cresent dough (Pillsbury although I would get the sheets vs the triangles)

Vanilla Pudding

Sticks for roasting over campfire

 

Place your dough on the bottom of your stick so it makes a dome

roast over the fire. This takes 10-15 minutes of roasting and rotation. (if you have smaller kids you will be doing this for them)

Once roasted take the dough tube and place on a plate. cool a little bit and fill with pudding and top with frosting. Voila! Campfire eclairs.
