This is a really good breakfast casserole that we enjoy as a weeknight dinner. Last month was the first time I prepped it for the freezer. It was better than the times I had made it the same day. Enjoy! :o)
TaterTot Breakfast Casserole
1 lb. breakfast sausage
1/2 c. onion, diced
1/2 c. green and/or red pepper, diced
2-3 c. shredded cheddar
6 eggs
1 1/2 c. milk
32 oz. bag of frozen tater tots (remain in bag until cooking day - no thaw!)
Grease 9x13 glass pan (or 2-8x8 pans). Cook sausage in skillet, adding onions and peppers as sausage begins to brown. When sausage is fully cooked, remove from skillet and place mixture in bottom of pan(s). Layer with shredded cheddar. Mix eggs and milk in bowl then pour over cheese and sausage mixture. Cover with plastic wrap and foil.
From Freezer: Thaw 24 hours in fridge. Preheat oven to 375*F Top with frozen tater tots and bake uncovered 40-45 minutes.
