Balls of Energy

Ingredients

* 1 small banana
* 1/2 cup chunky peanut butter

* 1/2 cup toasted wheat germ
* Finely chopped peanuts, mini-chocolate chips, or shredded coconut for coating

Instructions

1.  In a medium bowl, mash together the banana and the peanut butter.

2.  Stir in the wheat germ. Roll individual tablespoons of the mixture into balls, then roll the balls in one, or a mix, of the coatings listed above. Chill until firm. Makes 14 balls.

Pepperoni Muffin Bites

Ingredients

* MUFFIN CRUST
* 1 1/2 cups all-purpose flour
* 1/2 cup fine yellow cornmeal
* 1 tablespoon sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 large egg, lightly beaten

* 1 1/4 cups milk
* 1/4 cup vegetable oil
* TOPPING
* 1/3 cup marinara sauce
* 1/3 cup grated Parmesan cheese
* 1/3 cup finely chopped pepperoni

Instructions

1.  Heat the oven to 400º and line about 36 mini muffin cups with paper liners.

Shipshape Snack

Ingredients

* Red bell pepper
* Tuna or egg salad
* Thin pretzel stick

* Cheese slice
* Cream cheese (dab)
* Red pepper flag

Instructions

1.  Cut a red pepper in half lengthwise (or into quarters for lighter fare) and remove the seeds.
2.  Fill each pepper boat with lunchtime cargo, such as tuna or egg salad. Sink a thin pretzel stick mast into the center of the boat, then add two triangular pieces of cheese for sails.
3.  Use a dab of cream cheese to fix a small red pepper flag to the top of the mast.
 

Easy Ice-cream Pie

Ingredients

* 1 1/2 cups finely crushed graham crackers or chocolate wafers
* 5 tablespoons butter (melted)
* 1 quart pistachio or mint chip ice cream

* 1/2 cup hot fudge sauce
* red and green candies

Instructions

1.Place 1 1/2 cups finely crushed graham crackers or chocolate wafers into a 9-inch pie pan.

2.Stir in 5 tablespoons of melted butter, then press the mixture into the bottom and sides of the pan.

3.Freeze for 30 minutes.

Brownie Pizza

Ingredients

* Chewy brownie batter
* 2 1/2 cups confectioners' sugar
* 1/2 cup butter (1 stick), softened
* 2 1/2 tbsp. milk

* 1 tsp. vanilla extract
* Red food coloring paste (available at kitchen and party supply stores)
* 6 oz. white chocolate
* Assorted candies

Instructions

1.  Prepare the brownie recipe, with one exception: Instead of pouring the mixture into a rectangular or square pan, pour it into a lightly greased (and clean!) 12-inch pizza pan.

Apple Crisp a la Mode

Ingredients

* 6 apples (or 6 cups of apple slices)
* 1 1/2 cups rolled oats
* 3/4 cup brown sugar
* 1/4 cup all-purpose flour
* 1 teaspoon cinnamon

* 1/4 teaspoon nutmeg
* 1/4 teaspoon salt
* 1/2 cup butter (1 stick), softened
* Whipped cream or ice cream

Apple Crisp a la Mode - Step 1 To peel an apple safely, your child should hold the fruit in one hand, grip a vegetable peeler in the other, and push the peeler away from himself.

Strawberry Cheescakes

* 3 ounces of cream cheese, softened for 10 seconds in the microwave
* 3 tablespoons strawberry jam
* A few sheets of graham crackers, broken into squares or rectangles

Mix the softened cream cheese with the jam. Spread a little of the mixture on top of each graham cracker. Either eat right away, or chill for 30 minutes. The grahams will soften and become more like a cheesecake crust, and the topping will firm up.

Kids can help: Break up grahams, stir cream cheese and jam

Extras: Use different flavors of jam, top with a slice of fresh strawberry

Ingredients

* Smooth Peanut Butter
* 1 whole Red Apple, Cored And Cut Into 8 Pieces
* Mini Marshamallows

Preparation Instructions

Spread peanut butter on one side of each apple slice (squeeze a little lemon juice over the apple if not serving immediately). Place marshmallows on one apple slice, using the peanut butter as glue. Lay another apple slice, peanut butter side down, on top.

 

Chewy Granola Bars

Ingredients

* 1/2 cup plus 2 tablespoons packed light-brown sugar
* 1/4 cup plus 2 tablespoons honey
* 1 teaspoon vanilla
* 1/4 cup (1/2 stick) unsalted butter
* 3 cups low-fat granola mix (not cereal)
* 1/2 cup sweetened flake coconut
* 1/2 cup golden raisins
* 3/4 cup mini semisweet chocolate chips
* 1/2 cup slivered almonds

Directions

Combine brown sugar, honey, vanilla and butter in a medium-size saucepan. Bring to a boil over medium heat. Lower heat; simmer 2 minutes or until sugar is dissolved. Cool.
