Sweet Potato Apple Hash
Grilled Pasta Packets in Tin Foil
Description
This is a camping dinner that is so easy to throw together, and it does not include processed meats. Hooray! Cook your pasta before your camping trip and save it in a Ziploc bag. Then let everyone build their own pasta and toss it on the grill to heat!

Cresent dough (Pillsbury although I would get the sheets vs the triangles)

Sticks for roasting over campfire
Place your dough on the bottom of your stick so it makes a dome
roast over the fire. This takes 10-15 minutes of roasting and rotation. (if you have smaller kids you will be doing this for them)
Once roasted take the dough tube and place on a plate. cool a little bit and fill with pudding and top with frosting. Voila! Campfire eclairs.

Ingredients
- 1 (19-oz.) can chickpeas, drained and rinsed
- 2 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons chopped fresh mint
- 2 tablespoons fresh lemon juice
- 5 tablespoons olive oil, divided $
- 1 (2 1/2- to 3-lb.) deli-roasted chicken, skinned, boned, and shredded
Fruit to Go
Place your favorite fruits in a mason jar and seal it with the lid and ring. Place into your cooler. Great for work, road trips, camping, bbq's, picnics and summer parties.

Spring Orzo Pasta Salad with Asparagus and Artichokes
1 bunch asparagus, about 3 cups diced
1 tablespoon olive oil
2 shallots, minced
2 cloves garlic, minced
12 ounces orzo pasta, cooked to al dente and cooled
15-ounce can artichoke hearts
1-1/2 cups sun-dried tomatoes in olive oil, julienned
1 lemon, zested and juiced
1/4 cup white wine vinegar
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/3 cup olive oil
