Raw Mini Carrot Cakes with Cinnamon Glaze
- 3 cups shredded carrots
- 1 cup pitted Medjool dates
- 1 cup walnuts
- 1/2 cup unsweetened coconut flakes
- 1 tsp cinnamon
- 1/4 tsp ground ginger

Ingredients
2 lbs. skinless chicken thighs (bone-in or boneless)
Cresent dough (Pillsbury although I would get the sheets vs the triangles)
Vanilla Pudding
Chocolate Pudding
Sticks for roasting over campfire
Place your dough on the bottom of your stick so it makes a dome
roast over the fire. This takes 10-15 minutes of roasting and rotation. (if you have smaller kids you will be doing this for them)
Once roasted take the dough tube and place on a plate. cool a little bit and fill with pudding and top with frosting. Voila! Campfire eclairs.
I love camping and picnics! So, when I found this little gem I knew I would need to make these. I also think they would be great for a summer party.
Ingredients:
A large mason jar
A few teaspoons of your dressing of choice
2 Tablespoons chopped avocado
8 grape tomatoes
1 Tablespoon red onion, chopped
2 Tablespoons chopped cucumber
A few handfuls of romaine lettuce and baby spinach
2 Tablespoons of chopped feta
6-8 cooked shrimp
1 boiled egg, chopped
2 slices of cooked bacon, chopped
1 (1oz) package ranch dressing dry mix
¼ cup canola or vegetable oil
1 tsp. dried dill week (or to your taste)
Disclaimer: the ingredient amounts and even the varieties can be adjusted according to your desires. As listed, you should be able to get about 4 individually wrapped dinners.

This camp dessert just needs to be "put together" at camp. No cooking is involved. The base ingredient is the instant chocolate pudding, which must be prepared before the trip, at home, then the other ingredients; the gummy worms, chocolate cookie crumb dirt, and Cool-whip topping are all mixed and combined at camp, by the kids.
